Ice Cream Sandwiches – Yum!

Our family has become very creative with ice cream sandwiches this summer.  We have made the yummiest creations and I wanted to share them with you!
PB&J Ingredients: Graham crackers Strawberry Jam Peanut Butter Ice cream (strawberry ice cream is really good with this)
S'mores Ingredients: Graham crackers mini chocolate bar marshmallow (my kids stick it in the microwave for about 10 seconds first) icecream (cookies and cream is good, but really ANY kind non-fruity would be delicious!)
Salted Caramel (YUMMMMMM!) Ingredients: Ritz crackers Dulce de leche ice cream Don't have a clue about dulce de leche?  We used to eat this in Brazil almost every day.  Let me tell you how to make it.  Take a can of sweetened condensed milk and simmer it in a pot of water (covering it) for about 4 hours.  Open can and pour into a bowl.  Stir until smooth.  Delicious!
Here are a few tips I have learned: *When putting ingredients like PB, jelly or dulce de leche on a cracker, freeze them open faced before you add the ice cream.  I keep them in the freezer about 20 minutes. *Don't soften the ice cream. *Let the sandwich sit for about an in the freezer before you serve. I also saw some made out of mini donuts and some out of banana bread.  How delicious!  Be creative and share with us what you have tried!
